A personal favorite of mine. I never liked a meatloaf much. so I decided to come up with my own recipe. I hope your family enjoys it as much as mine does.
It is rare for me to come up with a recipe that is just too good not to write down. Usually, when I cook, I like to play around with the ingredients and so I rarely make something the same way twice. But this meatloaf was as close to perfect as I could imagine. I tried to be specific in my directions but there is no way to determine ahead of time how wet the mixture will be after adding the vegetables. How wet is too wet is hard to describe, but it is better to err on the side of moisture, I’d think.
Not your regular meatloaf! This sweet and savory loaf is enhanced with the textures of raisins and almonds and the spiciness of curry. Pleasantly different. If using high quality curry, use 1 1/2 tablespoons; most store bought curries are not as flavorful so use more. If looking for more sweetness, try adding apricot preserves or a fruit chutney.
This is a fun, inexpensive, creepy Halloween entree that will gross out and impress your dinner guests. It is mini meatloaves baked in tomato sauce that are shaped like rats with cheese in the middle. When you cut it open, gooey cheese will come oozing out. Garnished with a spaghetti noodle tail and carrot ears, these pests are sure to be a devilishly delectable dinner.
Everybody loves this flavorful meat loaf dish! It tastes even better reheated the next day! Italian bread crumbs, chili powder, and chopped garlic (I use the bottled kind) give this meat loaf a little kick, while grated baby carrots give it a nice color.
Mom made this every Sunday and we looked forward to cold sandwiches the next day, if there was any left!! Homemade breadcrumbs work best.
