Pineapple Curd

22 October 2020

Pineapple curd is a delicious alternative to lemon curd. Use it as a cake filling, tart topping, or fold in some whipped cream to make a fruit dip!

Lemon Velvet Sheet Cake

1 September 2020

A moist lemon cake with a lemon sugar glaze that shatters with every bite. The cake is super moist and will keep tightly covered at room temperature for 3 to 5 days.

Peach Jam Coffee Cake

30 August 2020

This coffee cake gets a double hit of peach flavor from using both jam and fresh fruit. For best results, use a good- quality peach jam (preferably homemade, if you have it). Make sure to cool this cake completely before slicing.

Easy No-Bake Strawberry Ice Cream Cake

16 August 2020

It’s hard to find a summer dessert easier and more refreshing than this combination of strawberry ice cream and a purchased 10-inch angel food cake! Layers of cake and ice cream, frosted with a purchased frozen whipped topping, are stored in the freezer until you are ready to garnish and slice. This should keep, covered, in the freezer for a week or two. I’ve never been able to find out exactly how long it will store, because it’s usually gone in a few days!

Orange Drizzle Cake

5 August 2020

Cake. Citrus. One-bowl baking.

If these words send a shiver down your spine, then this recipe is for you. It is a very easy recipe that can be different every time you make it if you swap the oranges for lemons, limes, grapefruit, or a mix of juices. You get a not-too-sweet, moist cake that will be gone before the day is over.

Remember to use exact measurements to get perfect results.

Lemon-Raspberry Oatmeal Crumb Bars

28 July 2020

These delicious, easy-to-make bars are sweet and tangy with an oatmeal crust and crumble. I prefer a thicker crust, using 3/4 of the oatmeal mixture for the crust and 1/4 for the crumbles. Feel free to make a thinner crust, using 1/2 of the oatmeal mixture for the crust and the other 1/2 for the crumble.

Limoncello Lemon Sorbet (With or Without Mint)

9 July 2020

This is the concoction I came up with when I couldn’t find quite what I was looking for. It is absolutely foolproof. It’s simple, sweet, and tart, with just enough limoncello liqueur. Serve with sprig of mint or fresh berries. Top with limoncello or vodka if desired.
