Bosnian Style Cornbread (Razljevak)
This is a recipe from my hometown of Sarajevo, and it is similar to a southern cornbread. What makes it unique is the addition of semolina flour (or Cream of Wheat®). If you don’t have semolina flour, you can just replace it with additional corn meal. This recipes also makes excellent muffins.

Spicy Cornbread Mini-Muffins
These are perfect for making 3 dozen mini muffins to take to a potluck. Basting the muffin tin with melted butter and dusting with cornmeal are an essential step to getting a marvelous crispy exterior to the muffins. To add more kick, do not seed the jalapenos and add an extra one.
