My daughter loves everything sour-vinegar and lemon in particular-so I made her this tart salad dressing with 2 types of vinegar and lemon juice. It goes great with red leaf lettuce or other mild salads. She will eat the whole bowl by herself.

This is a delicious breakfast smoothie bowl. My kids like it so I sweeten it with honey, but you can use agave as well for a vegan version or not sweeten it at all. Top the smoothie bowls with some granola for crunch, nuts, or other berries of your choosing.

Simple Tomato Soup

This is my go-to tomato soup recipe. It’s so easy and delicious. It’s easily made vegan (if you use margarine instead of butter or 2 tablespoons of olive oil), ready in 30 minutes, and I give leftovers to my kids for lunch. If you like, you can add cream, but my family likes it the way it is. I usually serve it with rosemary bread for dunking.
